Directions
1Follow the directions for making a single loaf in the stand mixer, to the point where the dough is ready to form.
2Line a cookie sheet with parchment paper.
3Half-fill a pastry bag, fitted with a no. 5, plain pastry tip, with the prepared dough. Holding the tip directly over the sheet, squeeze the dough in a circular pattern (see our instructional video on bagel-making).
4Spritz or drizzle a little water on the surface of the bagels and sprinkle a pinch of sesame seeds.
5Place in a warm, location (an oven with the light on is ideal) and let rise for 30-40 minutes, or until small holes begin to appear on the surface.
6Preheat the oven to 350 F and place the buns on a middle rack for 20-25 minutes, or until the surface is golden and the bun sounds hollow when tapped.
The bagels are easy to make and a versatile treat, fresh out of the oven. You can sprinkle any seed you like, such as sesame or poppy or spice up the dough with dried fruit, cinnamon, cheese, etc.
