Grand-Mère’s Oatmeal Cookies

My grand-mother's oatmeal cookie recipe.

Ingredients

 1 cup softened butter
 1 cup light brown sugar
 2 large eggs
 2 tsp vanilla extract
 1.50 gluten-free all-purpose flour
 1 tsp baking soda
 1 tsp salt
 3 gluten-free oats
 1 tsp cinnamon

Directions

Cream butter until light and fluffy, Add sugar, eggs and vanilla and beat until foamy.

In a separate bowl, mix the flour. soda, cinnamon and salt. Add this mixture to butter mixture, a little at a time until well mixed. Mix in the oats until blended.

Preheat oven to 350F.

Deposit the dough by spoonful on a greased or lined sheet. Flatten with a fork to get a crisper cookie.

Bake at 350F for 12 minutes or until the edges are golden.

Slide off sheet onto cooling rack and let cool completely before eating or storing in an airtight container.
